Crunchy Salmon & Cheddar Bake with Peas & Basil
From your local Aldi
500g Salmon Fillets, defrosted, cut into 2cm pieces
200g Soft Cheese
2 tbsps Dried Basil
100g Frozen Peas
Salt
Coarse Ground Black Pepper
4 Bread slices, crusts removed, cut into small cubes
50-75mls Olive Oil
100g grated Cheddar Cheese
To Serve – Garden Salad and New Potatoes
Preparation time: 15 minutes
Cooking time: 35-40 minutes
Serves: 4-6 persons
Method
1. Heat the oven to 200°C, gas mark 6.
2. Place the cubed fish into a large bowl.
3. Add the soft cheese, chopped basil, frozen peas and season really well with salt & coarse ground black pepper.
4. Spoon into a 20cm x 6cm deep baking dish.
5. Toss the bread cubes with the olive oil and a little pepper and the roughly grated cheese.
6. Bake in the pre-heated oven for 35-40 minutes.
7. Serve with garden salad and a few new potatoes.
Tips
1. Any fish will work here.
2. Once cooked, remove from the oven and cool slightly before eating.
3. Can be cooked and frozen whole, then thawed and warmed through until piping hot.
4. The peas can be added frozen, straight from the freezer.
5. Try a ball of Mozzarella, roughly sliced for a change.
